Mom's Favorite!

So I am trying to finish emptying out our freezer because as you all know we are moving so I pull out some pork country ribs and it comes to my attention that I have all of the ingredients to make pork with red sauce, red rice and black re fried beans yummy! It amazes me that I can look in my pantry and freezer and still be able to make solid meals like this one, it is one of my Mom's favorites and mine as well. To me food brings back memories of me being my Mom's little helper in the kitchen she always had me cutting, washing or peeling something and I still remember her words and her tips as she prepared dinner. I want to pass these traditions on to my children especially cause they are so interested in cooking, when we make cookies they each have a specific job and they know it they remember recipe's by the ingredients that they get to put in the blender or food processor. My children amaze me each and every day and I am proud to be there mother!

Sooo Mommy.

I was getting all of the kids ready this morning to take them to school and Michael says "so mommy what are you making for dinner tonight" ? I was like I don't know why do you have any requests? He looks down and then I see the smile light up his face and then he looks up and says "fried chicken with your French fries". So I said sure why not. I am just happy that he likes my fried chicken now he is such a picky eater so I indulge whenever I can. One day I know he will give in and try new and interesting flavors. Well I can dream can't I! Hope everyone likes the pic!

Flank steak burritos

Can I just say these were just AWESOME!!!! last night, the meat was tender and it was perfectly cooked. The guachamole was limey and had a nice garlic flavor. Then I sautaed some onions and green and red peppers, they were soft and sweet and went perfectly with all of the other flavors. To top it off I made two salsas a salsa verde and a salsa roja, they were both kinda spicy and then sliced some tomatoes and had sour cream for the hubby cause he likes it. I was kinda mad that I had to stop eating cause it was so good! Then to top it off strawberries over pound cake it was delish!!!

A whole lotta cooking

As you all know I do make more than one meal almost every night, one for me and one for my kids well tonight is no different so I made my all time hubby's favorite chicken and rice, and then I made some yummy Cod sandwiches with roasted bell peppers and basil sauce that I saw from the Barefoot Contessa show the other night it was yummy the flavors rocked and it looked awesome. Then I sliced a granny smith apple and covered it with caramel sauce, they were yummy crunchy and sour and sweet all at the same time. Tonight was a great cooking day!

Good Food!

So I am trying to get healthier and make some good choices so tonight instead of fried chicken I made myself this delicious Salmon salad. The salmon was cooked in olive oil and black pepper in my grill pan. I made a dill and caper sauce to go with it and it was awesome, (dill, basil, green scallions, capers, lime juice, sour cream, and mayo) I served it on a bed of baby spring mix cause that is what I like to eat and with a piece of sourdough bread! YUMMY!

Big Lou's Pizza Place

If you are ever in the San Antonio area and you want to stop and get some grub for you and the familia I suggest going to Big Lou's Pizza it is a hole in the wall joint but is always busy. The pizza is awesome and the place is very nostalgic and the prices are very appetizing as well and since it is in Texas the staff is very nice and friendly. They are known for this huge pizza that can feed 10 to 14 people and the pizza is HUGE!!!! We only ordered the 20 inch and we had pizza for a couple of days for leftovers. This place was on the Man Vs Food show and I so recomend it the pizza is thin like New York pizza and the sauce that they make for it is unreal and OOOHHH so good! It has the perfect amount of cheese and topping! I WAS IN PIZZA HEAVEN!

Chicken Tortilla Soup

Well before I left to go to San Antonio I made some delicious Chicken Tortilla Soup, you add some lime and avocado and it sends your taste buds to a different universe, mine is not very traditional but I love hominy so in it goes and I love the texture that it gives the food! This by far is my favorite soup to have on a rainy cold day with good friends.

Birthday dinner!

So tomorrow is Janelle's Birthday and since I will not be here to celebrate it with her I am making her some Chicken gumbo tonight. It is my good friend Leigh's recipe so I hope she likes it. Plus I am taking my camera to Texas with me so I can blog about all of the cool places that I want to eat at! SAN ANTONIO HERE I COME!!!!!! I love going to places where I am excited about the food and the places we are going to go see! Let's hope the house we want we will get!

Comfort Food!

So I woke up at 5 am to make some of my favorite comfort food and of course my good friend Lacey's favorite food! Sopa!!!! I work at the watch care room at our church and on occasion I bring in food for my co workers to try and I get there opinions and I get new ideas by there comments on how to improve my recipe. They are my best critics cause they tell me the truth! I LOVE working with all my Ladies so this is for them! So this is a Mexican pasta that your fry up and then put in a pot with some onions and garlic and then tomato sauce and some chicken bouillon. I had some left over roast that I dropped in to simmer and get reheated and absorb the flavors. Very simple but OOOHHH so good!

Valentine Dinner!

So I decided to treat my hubby to his two favorites Crab Stuffed shrimp and Fish tacos with pico de gallo and black refried beans and red rice. It was so yummy a little time consuming but so worth the effort! It brought some joy to his heart and that brought joy to mine, as soon as I figure out this blog I will post some pics!
